We traded income for hours over here, how about you?

Texting with an old friend in the quiet of the early morning just now, we talked about the blessings of it all.

New ways of doing things borne more out of necessity than fear are the ones I want to hang onto after the Covid-19 virus has swept through and petered out.

What are those things borne out of necessity that you want to hang onto?

  1. I couldn’t find any frozen pizza but really wanted some easy lunches for the girls so I thought I’d make my own pizza dough because I also want to get better at using yeast. Found an overnight pizza dough recipe and it is sooooooo good. I’ll never buy another frozen pizza 😆 so I’ll hang on to that.

    1. Chelaine so much better than frozen!❤️😄 I’m getting much better at using up the food I have in the fridge and getting creative. It’s mostly a fun challenge😬

I have found myself more thankful for simple things in life that have become scarce or often out of stock locally.. things such as syrup, honey, local milk, whole chickens, even butter, flour and sometimes eggs. I try to stretch everything I have and also limit food waste. It has helped too with mindless snacking, because I am more conscious of making food last and purposefully planning when to eat it. I participate in a community garden and have made it a practice of going each day to harvest from rogue plants that sprouted up over the winter, kale, herbs, green onions. I probably wouldn’t have worked so hard to use these “leftover” plants from last season before, but now it seems like such a shame to waste edible food.

      1. Yes! And I’m a little ashamed of myself for my past food waste! But I used the radish greens last night instead of throwing them to the chickens. I thought- maybe another blessing of quarantine life will be expanded tastes and being less picky. The greens were surprisingly a nice addition to our beans and rice (the ultimate quarantine meal!😂)
